PINOT GRIGIO FUN During the 2005 harvest, we made a Pinot Grigio Rose with our grand child’s 4th grade class as a school fund-raising project. The children picked the grapes and stomped them in the old fashioned way with their feet. The wine was then fermented on the skins for 5 weeks with extended maceration. Alas, after ageing the wine for 8 months, the tannins were so strong; they overwhelmed the lovely Pinot Grigio fruit, making a wine with no redeeming graces. By April 2006, no amount of blending or residual sugar helped this poor wine. Small wonder, the Pinot Grigio producers of the world have not chosen to produce / market a rose from this grape! To avoid disappointment to the children, who had already created a label for the wine, we substituted our Bianco blend for the 25 cases for the fund raising, to the great delight of the parents. See what fun we are having with our grapes, wine-making and experimentation! P.S. By August 1, 2006, the tannins on this rose had calmed down to the point that we may eventually end up with a delightful, unique wine. |
